When I used to make it (fres...OMG I love peach pie. When I used to make it (fresh, FRESH peaches!), I'd barely put any sugar in (I don't have a sweet tooth). The crust recipe I used had a bit of sugar in it, which allowed me to cut way down on filling sugar. It should be cold.<br /><br />Add a bit of ginger and almond extract to the peaches - it makes them even more tasty.<br /><br />If the peaches do not smell and taste great fresh, they won't make a pie worth eating.
